About The Sofra Kitchen
Sofra is the word for the low, round table where families across Albania, the Balkans and Turkey traditionally gather to eat. It stands for exactly what this site is about: generous, shared, home-cooked food.
The Sofra Kitchen is an independent food publication focused on Albanian, Balkan and Mediterranean cooking. We publish recipes for dishes like byrek, tavë kosi and fërgesë alongside easy everyday Mediterranean meals — 13 recipes so far, with more added regularly.
How we write recipes
- Ingredients you can find in an ordinary supermarket, with traditional alternatives where they matter.
- Metric and US measurements, oven temperatures in °C and °F.
- Honest timings — including resting, soaking and marinating time in the total.
- Notes on the traditional method when our home version takes a shortcut.
- Tips, substitutions and storage information, so you can adapt a recipe with confidence.
Our editorial standards
- Original writing. Every recipe and article is written for this site. We don't copy or scrape content.
- Honest photos. Photos show the dish they accompany. Where we use photos by other photographers, they are properly licensed and credited on the page and on our image credits page.
- No fake reviews or ratings. We only show ratings when they come from real readers.
- Estimated nutrition. Nutrition values are calculated estimates and labeled as such.
- Corrections. If you spot a mistake — in a recipe or in the history behind it — please tell us and we'll fix it.
- Advertising. The site may be supported by clearly labeled ads. Advertisers never influence what we publish.
